    Instructions

    Cut onion and mushrooms into strips.
    In a large skillet or pan, heat oil over medium-high heat until hot. Add the onions and saute until tender. Add the garlic once the onions are almost done, make sure not to burn the garlic.
    While the onions are cooking prepare the marinade for the mushrooms. Combine soy sauce, maple syrup and water with the spices and mix well. Pour over the mushrooms and combine well so all mushrooms are covered.
    Once the onions are tender, add the marinated mushrooms and cook until soft. Make sure to stir once in a while to make sure they are cooked evenly. Let cook for 15-20 minutes.
    Serve with pita, vegan tzatziki, salad and vegan feta cheese. Enjoy.

    500 grams shiitake mushrooms
    1 red onion
    1 clove garlic, crushed
    50 grams soy sauce
    2 tablespoon maple syrup
    4 tablespoon water
    1 tsp oregano
    1/2 teaspoon ground cumin
    1/2 teaspoon rosemary
    Salt, to taste
    Pepper, to taste
