A great breakfast option in that market - Edit
There aren't many (if not any!) vegan options in San Antón market, but this one is your go-to place. You can have brunch/breakfast and they'll make it vegan for you. They have plant-based milk, avo toast (huge portion!!) and they always have a vegan cake option made by a business called keikplantbased (same as the one who works with Dale Café, vegan coffee place in Madrid).
