Fine dinning at it’s vegan best - Edit
The wife and I overnighted in Vancouver on our way home from week on Cortes Island and took the opportunity to check out the recently opened Folke.
Read moreWhat a great choice, it’s upscale, fine dinning, but with that casual edge created by the family style share plates. It really is something that needs to be experienced, vegan or not.
We opted for the chef’s tasting menu, with the wife adding in the optional wine pairings. Be warned, it’s a seven courses of deliciousness which requires an appetite for sure.
First course was Beet Tartare with the oatmeal/rye sourdough griddle cake. That was followed by the chickpea tofu, that is a mind-trip - tasting like soca but with the mouth feel and texture of tofu. Next up was the dumplings that were an umami and textural delight. Batting clean up in the menu was the zucchini dish, and a masterpiece.
Given that is is basically just zucchini on the plate, I expected this to be my least favorite dish of the night; but boy was I wrong. The zucchini was expertly grilled to still have lots of crunch, but a deep caramelized browning. The dried zucchini and walnuts add some crunch and sweetness, the zucchini/wakame really intensifies the zucchini flavour and mint leaves added some freshness. The dish easily packed the flavour to match its plating.
Courses five and six were the turnip and chilled ramen. The turnips might have been my favourite dish. The ramen had a great chew to the noodles and lots of flavour. The meal was rounded out with the raspberry semifreddo.
To be fair, this was a bit of a pricey meal, but should be expected given that it’s in my mind a Michelin Star experience. The added bonus is that gratuity is included, so what you see is what you pay, period (in fact the Interac machine has no option for adding a tip).
We’ll be back next time we are in town.

Fabulous vegan fine dining - Edit
Astonishingly good, creative, vegan fine-dining with warm and attentive service and an urbane ambiance. It opened only a few weeks ago and just might have become the best vegan restaurant in Vancouver, and one of the city's best restaurants of any cuisine. And the service-included philosophy is a lovely break from North America's undignified and inequitable tipping culture.

Descriptions of the dishes in the menu, rather than as the dish is delivered, would benefit everyone: achingly cool though a four-word description is, many (those trying to lose weight or better control their diabetes, say) would appreciate knowing that 'tofu' isn't tofu but rather made from carbs. The music could have been more compatible with the serene enjoyment of excellent food. And the portion sizes, especially dessert: it would have been lovely to have been able to enjoy, not just admire, something so good.
But these are minor quibbles. Go. Eat. It's wonderful.

Taste Adventures Await - Edit
A group of us from Meatless Meetup went to Folke for their tasting menu ($75 p.p.) and sampled 12 dishes in total. Each dish was brought out and explained by the chef who created it:

Unfair as it is, we often rate restaurants on how easy it would be to make a given dish ourselves. Folke's dishes are so complex, not only would you be unlikely to be able to replicate them at home, I dare you to even repeat the list of ingredients correctly after having the dish explained to you by the chef. (Hope I got the list above correct!)
Service was very attentive. Just before we sampled the first bite of each dish, a server was quick on the chef's heels to ask how it tasted.
Every dish was tasty, a complete surprise, and exceptional in its own way. The food or vegetable phobic among us would have a hard time at Folke, but for the rest of us, this restaurant offers a veritable taste adventure. Can't wait to try next season's menu.

Yum! Thanks for your review of our lovely experience at the new vegan Folke restaurant, Nancy. I do like their model of no tipping (gratuities are included in the price of the dishes to provide a living wage to staff). As ardent vegan foodies, I think we really enjoyed seeing what was coming out next, appreciating its presentation, and evaluating the tastes and textures that we were given. Agree that this is the kind of food that you are never going to make at home, so it's nice to treat yourself once a year to this type of high-end experience. Go for a special occasion and get the tasting menu!

Exceptional food, unlike any other spot in YVR - Edit
I’ve tried every vegan restaurant in YVR in the last two years and this new spot is the best for high end meals. There are a lot of hit and miss places at the same price point now but finding truly exceptional dishes from end to end hasn’t happened in Vancouver until now.
Read moreThe dishes are inventive and the flavour combinations were unlike any other. Vegans are not an afterthought at Folke and the flavours of the fresh local and foraged produce is front and centre.

I cannot wait to return! If this team can keep the standards up, they could win best restaurant in Canada. You won't be able to get a reservation at this place once word gets out so do yourself a favour and book a table now.

Cons: A bit out of the way but worth it, The cutlery is mismatch - if that bothers you, Can’t think of anything bad to say really!
