The Reuben was delicious! So creative and I really appreciate that they are creating delicious and fun vegan food with whole vegetables. One of those places where you want to try the entire menu and wish you had multiple stomachs… will just have to come back! Also the staff are so kind!! All around 10/10 experience.

Read moreOn my first visit I ordered the most scrumptious iteration of any reuben I’ve had to date. Spawned from the celery root of all things, it stands heads and shoulders above a crowd of tempeh, tofu, and portobello varieties.
The second visit, the gnocchi, my god. While I tend to gravitate toward dumplings, including those of Italian origin, these particular potato-stuffed pillows were paired with a bolognese red and a cooling dollop of herbaceous cream. A perfect balance? You gnow it!
The above choices will likely change. No problem. That the menu seems to rotate to ongoing acclaim just illustrates the talent and dexterity of this kitchen.
Gladys doesn’t need to be front and center. I’m convinced that these delicious, innovative, gourmet plates could be served forth from any front - from food truck to back alleyway to under the gd staircase at #4 Privet Drive - and still retain its magic.
I cannot wait to see what you do from here, Gladys. As for the rest of you beautiful people, get some Gladys while the Gladys is hot. Don’t miss it.

The reviews were right! This place is amazing - great food and great people. I couldn't decide what to try first, so decided on the Reuban. Yummy. But now I want to try all the others, so I have to go back.

Had 3 super dishes. The Gnocchi, the Rueben and the fricasse. Also had Brussels sprouts as a side. Wonderful flavors and our son loved the Gnocchi.

I travel for work a lot and I have my favorite vegan spots in every city I go to. Gladys is not only my favorite in Denver, it also rivals the #1 spot for favorite anywhere I’ve been so far. The Reuben sandwich is excellent - I wasn’t even big into Reuben sandwiches before going all plant-based, but somehow this hits every spot. Get that and the carrot broccoli soup - dip that in that, enjoy your life. Also they’re really passionate about their ingredients and get excited to incorporate new locally sourced ingredients into new recipes — and they always have new stuff, seasonal items, rotating menu (though the Reuben and soup are always there). This has quickly become the place I almost always come to for dinner when I’m in town for a night. So much so that they recognize me now, and I don’t live in Colorado.

This is my favorite vegan spot in Colorado hands down. The gnocci is unspoken for. All of the food is delicious unique and flavorful. We often drive from Boulder just to go here!

Gladys is a food stand in a warehouse-turned trendy food court. Great place to stop if with non-vegans as there are lots of other great options for them in the vicinity. But the food at Gladys is so good they’ll be silly not to eat here. I had the Reuben. It’s an interesting and rewarding spin on the sandwich. But it will cost a bit.

Ruben was unhinged. I would have normally gotten something else, but it was easily the best sandwich I’ve ever had. Nothing needs to be added. Pepper swirl around a perfect faux meat sour mayo bread combo. The bread dude. It can make or break a Sando, and this monster redefines my standard. Unbelievable sturdy crust, light but durable exterior with plenty of pockets to let the dressing and oils fill the inside of the sandwich. The last few bites are bliss. Cannot recommend enough. This will be a mandatory first and last meal every time I visit from now on.

Have been here twice so far. The root vegetable Reuben and salted chocolate cookie are super decadent. Had the tofu fricasee last time with amazing seasonal vegetables (ramps! Fresh favas!) and idk where they source their tofu but the texture was amazing. Great quality ingredients and rotating menu with just enough tempting options to keep wanting to return.

My favorite restaurant in the Denver area and one of my favorites ever. Have been here a few times and everything I tried had unique flavors and was so delicious. Sunchoke and beets are out of this world! Spicy, crispy, and yummy. Mushroom gnocchi was the best Italian dish I've eaten. Gordo pozole was mildly spicy and refreshing. Garden flatbread was great too. Don't miss this gem!

Located as a stall in a food hall at Edgwater Public Market. Order & they give you a pager when its ready to pick up. The menu is all plants - no fake meats. I had the Root Vegetable Ruben and it was phenomenal. The Sea Salt and Chocolate Chip cookie was to die for. The menu was very unique and if it wasn't so far out of my way I'd go back to sample everything. The quality of what I had and what I saw other people were eating was top tier. Gladys could really have their own restaurant.

Small, but carefully crafted, menu. The root veggie Reuben is a mainstay, thankfully! Because that thing alone is worth a visit!! I absolutely adore their backstory and applaud these two families for pouring their heart and soul into this dear place. It’s wonderful.
