I don't trust it... - Edit
Only one vegan croissant here, and I suspect it might have contained some butter as I could taste something like it😒plus, it was placed right next to a plate of croissants that had ham or some meat sandwiched in the middle. Overall didn't feel so comfortable eating this and wouldn't rate it as a vegan-friendly place.

Vegan croissant - Edit
When I went (a Sunday morning during spring break-ish time), there was no available seating and only one vegan option, a croissant. The croissant was pretty good, very sweet and crunchy, but not the best in Florence. Good place to go with omni friends so everyone has an option!

The croissants are not vegan. There is one option of a vegan cake. There is only Americano coffee.

Nice vegan croissant. It has a sweet glaze on top and is plain on the inside, which worked for me. They also sell some specialty grocery products but this is super limited.

Small artisan bakery and self service caffè. More French than Italian. Offer Italian bread, breakfast menu and daily lunch/snack menu, desserts. Some of them are vegan and are clearly marked. If not, ask. I found croissants, banana bread and some coffee cake. They also offer some pasta, jams…It was cheaper than shops in the center. There are some small tables.

Nice bakery in San Frediano: not a caffetteria, but you can have a coffee or a tea with vegan croissant o bread and jam in one of the few small tables. I had breakfast, but I suppose that a satisfying vegan lunch with pizza or focaccia could be done.
