Takes veggie rolls to a new level

Vegan sushi from an omni place- it's fine, but it always feels like an afterthought to the fish. Not so at Sukeban.

The first thing that probably comes to mind thinking of sushi is a cucumber avocado roll. Always fine, rarely great... but the chef at Sukeban has taken the basic cucumber and avocado roll and elevated it with a lightly pickled cucumber (a great twist.)

BUT- if you were going to get just one roll here, you've got to get the shiitake tsukudani. I don't know how they packed so much umami into a little slice of mushroom. It's divine.

The little details were also great. The seaweed was crispy and tastier than standard nori- they clearly source it high-quality. The soy sauce is artisanal as well. I never eat "wasabi" from standard sushi places since it's actually just green horseradish (which I detest), but Sukeban's wasabi is the real deal, which is very hard to find here in town. It's not the fresh grated root, but a premade paste made with only wasabi.

It's awesome for a date night or a solo drink and snack. There's only one table for groups so it's not a spot for a lingering get-together. I really liked that they don't have the slabs of fish on display in front of the sushi bar, but if you don't even want to see the chefs handle fish, then you'll want to reserve the table.

I had reached out with a cross contamination concern, and Sukaban responded quickly and changed their practice in response. They know what vegan means and I can trust them to deliver on that.

Cons: Only a few seats, be prepared to wait, Limited appetizers
