Read moreI enjoyed the Mexican Pizza at Tabay’s Mindful Kitchen food truck. It was a generous portion and a wonderful combination of flavors. I recommend using a fork because it is packed full. It was fun to eat in two layers because the top and bottom layers separate in a good way.
The best part was the texture of the crust. It was browned perfectly and had a light and crunchy texture.
I have enjoyed their food every time I've visited.

The owner was very friendly and open to any questions we had. Food was delicious, we got the fish tacos and fish and chips (seemed a little lighter before sitting on the plane all night).

After reading all the great reviews, I knew I had to try Tabay’s Mindful Kitchen food truck. I ordered the pineapple burgers and lavender lemonade/Persian cherry drink. The burger was incredible - probably the best I’ve had in a while. The only downside is that it took a good 20 minutes for food to be ready, which felt a little long for a food truck. I went back the next day to try more items before flying home but they’re closed Wednesdays 😞

This would have 5 stars if it felt just a little better value for money! I paid 20 dollars for a wrap and a drink which I just think is pretty steep. The wrap was lovely but it did take 20 mins and for the price I would hope the portion would be slightly bigger.

We were starved when we landed in Maui. Rental car agency suggested the food trucks near Costco and this vegan one really hit the spot. Persian and Paradise burgers were great. Didn’t get much of a photo since we ate so fast.

I've been wanting to try this food truck for a while now, and I'm so glad I did. I've always wanted to try a Loco moco, and I'm so happy Tabay's had a vegan version available. It was yummy! I'm a little sensitive to sodium, so it was a bit salty for my taste, but it is meat smothered in gravy, so that's to be expected! The truffle fries were absolutely delicious as well. My sister got the buffalo wings, and I had a bite. They were good too. I'll definitely be back to try more things since there's a wide variety of unique options! The individual running the truck is very kind. Walked out our order to us and waved out the window to say bye and thank you as we left.

I absolutely loved eating at Tabay’s Mindful Kitchen. The Persian fries were fabulous! we ordered 5 different burgers and enjoyed them all. I highly recommend this place and wish we found it earlier on our vacation.

This food is exceptional and it is clear that it is made with love. Don’t let the fact that it is plant based scare you into thinking that all they serve is lettuce. This food is packed full of flavor. The buffalo chicken wings were everything I love about Buffalo wings with none of the guilt. The fish tacos were out of this world good and my wife loved the Mexican pizza. If you’re looking for an extra treat, and want to splurge a little the fried Oreo is absolutely delicious. I absolutely cannot wait to come back to try the Persian burger and the chicken waffle sandwich made with a maple aïoli. Remember always support local.

Set in a food truck park, Tabay’s was an excellent choice! Unfortunately closing up shop for the next month, but this is a must visit when he returns. 100% vegan food truck that is definitely worth a visit! We had the Fish Tacos, Human Style Fries (like California’s “In and Out” fries, but better!), Hawaiian burger, and soft serve, which were all delicious. To top it all off, Tabay and Sahel are incredibly kind. Wish we had found them earlier in our trip to give them another visit.

This all-vegan food truck has so many options, and the people are super friendly! Luckily for us, they were open on Thanksgiving, and even luckier, they had a vegan thanksgiving plate available! In addition to the plate, we ordered the Buffalo Crispy Chik’n Sandwich. Both were just delectable! We will be back again before we depart!

Delicious! My family and I were thrilled to see Chef Tabay has moved to Maui. Our children took a six week online, live cooking class from him during the pandemic shutdown in 2020…when he was still a kid himself! We knew his food is delicious and we loved our meals from his awesome food truck! We ordered the Persian fries, crispy tacos, and fresh squeezed lemonade. Amazing. Fresh, house made, vegan, allergy friendly with no nuts and no gluten with big portions. We got to meet him and his mom in person and they are both so sweet and welcoming. You will enjoy this great food!
