In advance. Well, it's a 'system' that doesn't seem to work. Also: I didn't want a 3 course meal (I didn't get it, either), I just wanted a bowl. If you're a tourist in a city, looking for a vegan place, you don't have the time to reserve weeks in advance. It's just silly.
