Easy Vegan Pasta Salad

    Instructions

    Cook pasta according to instructions on packet.
    While the pasta is cooking, chop all of your veggies.
    Mix the hummus, plant milk, lemon juice and a dash of black pepper in a small bowl.
    Once the pasta is cooked, drain and rinse with cold water.
    Add everything together in a big bowl and enjoy.

    Ingredients

    For the salad (most ingredients are to taste, use amounts you prefer):
    1 serving whole wheat pasta
    Orange, red or yellow bell pepper
    Red onion
    Cucumber
    Baby corn
    Cherry tomatoes
    Avocado

    For the sauce (1 serving):
    2 teaspoon hummus
    1/4 cup plant milk
    2 teaspoon lemon juice
    Black pepper, to taste
