Pancakes with Blueberry, Coconut, Lemon

    Instructions

    Combine wet & dry and leave for about 5 minutes to thicken.
    Add a couple of handfuls of blueberries.
    Cook in batches, and serve with maple syrup.

    Ingredients

    Dry Ingredients:
    2 cups self raising flour
    2 tablespoon coconut
    lemon rind
    3 tablespoon sugar
    3 tablespoon nutritional yeast
    pinch salt

    Wet Ingredients:
    3 tablespoon aquafaba
    1 1/2 cup mylk
    3 tablespoon coconut oil
    1 tablespoon apple cider vinegar

    Handful of blueberries
