    Instructions

    Soak the oats overnight in water (and the dried fruit if using).
    In the morning place the oats in a pot, add 3/4 cup of water. Bring to the boil, simmer, and add the salt.
    After it begins to thicken, add most of the coconut milk, reserving a few tablespoons. Stir and let the oats thicken again.
    Serve with the remaining milk plus the maple syrup drizzled on top. Sprinkle with the toasted coconut (optional).

    Ingredients

    1/2 cup rolled oats (not jumbo)
    1/2 cup coconut milk
    1 tablespoon maple syrup
    1/2 teaspoon salt
    water
    1 tablespoon of chopped dried mango and/or pawpaw (optional)
    A tablespoon of toasted dessciated coconut (optional)
