Mashed Sweet Potatoes

    Instructions

    Preheat oven to 425F degrees (218C).
    Clean and dry the sweet potatoes, then rub all over with olive oil.
    Place the potatoes onto a baking sheet, uncovered. Bake for 45 minutes, or until they are soft (insert a knife through).
    Let cool for 10 minutes. Then place them in a mixing bowl and mash them, removing large pieces of skin.
    Mash in the remaining ingredients.

    Ingredients

    4 large sweet potatoes, red skin or yellow skin
    1 teaspoon ground allspice
    1/2 cup coconut milk
    1/3 cup olive oil
    2 pinches sea salt
    optional: ground black pepper to taste
