    Instructions

    Put all of the ingredients for the sauce into a blender jar and blend until smooth. Add salt or other spices as you desire.
    Create the vegetable noodles by spiralizing zucchini, carrots, cucumber and sliced red bell pepper.
    Put all of the vegetables into a large bowl and drizzle with the spicy peanut sauce. Mix well and top with green onion, fresh cilantro, cashews and lime. Serve and enjoy!

    Ingredients

    For The Pasta: (it is best to use a spiralizer, if you don't have one use a potato peeler).
    2 medium courgettes
    1 small carrot
    1 cucumber
    1 bell pepper
    2 green onions
    2 tablespoon fresh cilantro
    2 tablespoon cashews
    1 lime, cut into wedges

    For the peanut butter sauce :
    2 tablespoon natural peanut butter
    2 tablespoon soy sauce
    2 tablespoon lime or lemon juice
    2 teaspoon ginger, grated
    Garlic, to taste (optional)
    1 big date, pitted
    1/2 teaspoon red chili flakes
    1/2 cup water
