Silken Tofu Chocolate Mousse

    Instructions

    Heat chocolate in a bowl in the microwave for 30 seconds. Stir until all chocolate chunks melt. Set aside to cool at room temperature.
    Blend tofu in a food processor or blender to a smooth consistency. Add the melted chocolate and combine well.
    Spoon into ramekins or bowls and place in refrigerator for half an hour. Garnish and serve.

    Ingredients

    3 1/2 ounces dark chocolate
    12 oz package of silken tofu
    2 tablespoon maple syrup
    Cacao nibs, to taste
    Fresh mint leaf, to taste
