Sweet Potato Rice Pudding

    Instructions

    Blend or process all ingredients to desired consistency.
    Add milk to desired consistency. Serve warm, room temperature or chilled.
    Use with cooled rice - however warm rice yields a sticky, marshmallow-like consistency. Add more nutmeg or a non-dairy creamer for a warm, decadent treat.

    Ingredients

    1 cup brown rice
    2 large sweet potatoes (baked at 350F for one hour, skins removed when cooled)
    1 cup non-dairy milk of choice
    2 tablespoon pure maple syrup, agave or 1/2 teaspoon stevia
    1 teaspoon vanilla
    1 teaspoon cinnamon
    1/4 - 1/2 teaspoon nutmeg (optional)

    Serving Size

    1/2 to 1 cup
