    Instructions

    1. Preheat oven to 375 degrees F (190 degrees C)
    2. Add chopped spinach, mushrooms, red onions to a bowl and mix.
    3. Add 1/2 cup of vegan cheese to bowl and mix.
    4. Add 1/2 of Just Egg bottle to bowl and mix.
    5. Add all the seasonings and mix.
    6. Pour mixture into the frozen pie shell, then sprinkle the remaining 1/2 cup of cheese evenly on top.
    7. Pour the remaining Just Egg evenly on top.
    8. Top with tomatoes.
    9. Place pie on a baking sheet and bake for 45 minutes.
    10. Let cool before serving. Place leftovers in the refrigerator.

    Ingredients

    1 frozen 9” deep dish pie crust
    1 bottle of Just Egg (12 fl oz)
    1 1/2 cups sliced cremini mushrooms
    3 cups chopped fresh spinach
    3/4 cup diced red onions
    1 cup vegan shredded mozzarella cheese (divided)
    1/4 cup cherry or grape tomatoes halved
    1/4 tsp garlic powder
    1/4 tsp onion powder
    1/4 tsp sea salt
    1/4 tsp black pepper
    1/4 tsp crushed red pepper chili flakes
