Instructions
Have rice ready - it should be slightly under cooked.
Chop cauliflower and broccoli into small pieces. Wash and let stay in water until it's time to put them into the pan.
Wash and chop the beans and carrots.
Dice into small bits the garlic and ginger.
Heat cooking pan and add oil. Once oil is hot add garlic and ginger, and stir for 30 seconds. Reduce the heat.
Add carrots and beans, cauliflower and broccoli.
Add salt and pepper. Stir well, and close the lid for 2 minutes on medium heat.
Stir again, and closed the lid for another 2 minutes.
Using a fork or the holding end of your spoon, stir in the rice very well.
Keep heat on for 1 minute, then remove pan from stove top.
Add optional spring onion.
Transfer fried rice to a serving bowl, and garnish with chili or cilantro leaves.
