Gladys Delivers Next Level Plant Based Dining - Edit
Gladys is the GOAT. I absolutely love this restaurant. The menu changes seasonally and consistently delivers high quality, fine dining level plant based dishes that feel creative and intentional. It is vegetable forward with standout proteins like perfectly prepared tofu and lupini beans that actually feel satisfying and substantial. Everything from the sandwiches to the composed plates is thoughtful and packed with flavor. The charred Caesar is easily one of the best salads I have ever had with crispy breadcrumbs and a rich, balanced dressing. The celery root Reuben is incredibly unique with tender, savory layers that really hit that classic comfort note. The “Greg” burger is a must, hearty, flavorful, and one of the best plant based burgers around. They also rotate in excellent tofu dishes, pastas, and gnocchi that keep the menu exciting. The new dining room at Edgewater Public Market is a great upgrade, and the chocolate chip cookies are non negotiable, both the traditional and gluten free versions are outstanding.

Most Excellent! A vegan treat! - Edit
Super friendly and attentive staff Very clean and organized. Sat at the counter and was served immediately. We knew what we wanted to try (Rueben and Po’ boi) dressed fries with one and Cesar salad with the other. You can watch the kitchen in action, somewhat, and certainly the plating and execution, which I love as that is all part of the experience for me. Feels more intimate when you can witness the care in presentation.

Read moreI ordered the Po' Boi burger for myself and got the truffle sauce with my fries, and let me tell you, you MUST get the sauce if you like creamy, mushroom stuff! The Po' Boi was also delicious, and I got to sample a bit of the Kabocha Gnocchi, the Reuben, and the Sweet Beet salad, and they were all things I would order again! I honestly was surprised by how much I liked the Sweet Beet salad, as I am not typically a fan of grapefruit (which I believe was one of the citrus fruits included in the dish), but it's a great mix of sweet and earthy flavors.
The location is inside of a food court type setup, so this also seems like a good place for a group with varied tastes, as if you have omnivores with a fear of vegetarian/vegan food with you, they could grab food elsewhere and I believe you could take your food and eat it out in the court area together. The decor is modern and reasonably trendy and a little industrial, and the restaurant was very clean (but we also arrived shortly after opening, so that's to be expected). I think it would make a decent date spot as well.
I think next time I'm in the Denver area, I would prioritize stopping by here. It was really tasty, and a nice little gem of a restaurant!

Read moreThe menu changes seasonally, which provides opportunities for new discoveries. The gnocchi is top-notch, and so are the fried artichokes (though on my most recent visit they weren’t on the menu). The Rueben is excellent, with its “meat” made from celery root, which is much better than processed soy/gluten meat substitutes (in terms of taste, texture, and health). The fried polenta is good if you don’t mind it a little dry (better as a shared side than as a meal).
Counter service is friendly. The Edgewater food court is a food court, albeit with a dash of hipster flavor.

The menu online looked good so we decided to come out here without knowing the area at all. We didn’t realize it was in a food court and were a little worried we had made a mistake. But we ordered the summer spinach salad, tofu piccata and nduja toast, and it was all so good. The toast was one of the more creative veggie toasts I’ve had—lupini beans, fennel and romesco, so yum. I highly recommend. Think we might want to try the Reuben next time.

Edit: This is one of our favorite restaurants in Denver, and we come here whenever I’m in town. Recently they’ve moved into a different space in the same food court where you can get takeout or have a more “dine-in” experience. They have a seasonal menu and a few favorites that are the same year round. My current faves are the fried Brussels sprouts and tofu cacciatore. My partner says the apple pavé is the best dessert he’s ever had.

Wonderful creative food and service as usual, but the new space is so killer. Don’t miss the seasonal savory funnel cake - so innovative and delicious. The Reuben is so so good, curry caprese and cookie were tasty — and all is well portioned! Staff is terrific and we loved being able to see the chefs work in the open kitchen. Plentiful free parking. Great also for a walk around nearby Sloan’s lake after a meal.

Who would think that the BEST vegan eatery in all of the Denver metropolitan region would be in a food court? We've been vegan for about 10 years and have tried almost every place, vegan and those with vegan options. Somebody People used to be at the top of our list, but now, for what you get, and the prices you pay, we've really lost our appetite (pun intended).

If I may be so bold as to suggest that this is 'haute vegan cuisine'. With regular menu changes, the creations are inspiring and the flavors are always dancing on my tongue. Just tried the tomato funnel cake (which I'm told will have short run because fresh tomatoes and peaches will be out of season shortly)-----holy cow---what an amazing dish!
Run, don't walk to this place. You will never be disappointed.

Where has this restaurant been all my life!!? Why when I look for Vegan restaurants - does this fabulous place NOT pop up on my phone ??? I accidently saw a segment on CO. & Company - featuring them making their Reuben Sandwich. We got over to Glady's as fast as possible. The French fries are some of the best I have ever had - and we make it our business to taste a lot of fries around the globe, just watch the salt please. The savory funnel cake with tomato, peach topping is out of this world, fantastic. The Gnocchi is amazing. As is the Garlic toast, squash small plate, cookies and their signature sandwiches. I will go back as often as possible, it is a drive for us, but worth it!! Highly recommend this great all plant based restaurant.

This place does it right. They moved from the counter walk up location into a nicer seated dining area which is an upgrade. You can tell they put thought and care into the menu and use quality ingredients. Definitely one of the best vegan restaurants around.
