Couscous Summer Salad

    Instructions

    Cut the cucumber into small cubes.
    Cut the plum tomatoes into quarters.
    Boil water and pour the right amount of it in a small bowl (according to how much water the couscous-package says is needed to make the couscous) and add the stock to it.
    Next place your couscous into the water.
    Cut the Violife cheese into small cubes and throw everything together in a larger bowl.
    Add chopped parsley to taste. Serve and enjoy!

    Ingredients

    1/2 cucumber
    200 gram plum tomatoes
    1/2 Violife greek block cheese, or block vegan cheese of choice
    Parsley, to taste
    40 gram dry couscous
    1/4 cube veggie stock
