Preheat oven to 425° F.
Place rice topping in a small pan and mix with greens.
Cook potatoes for 5-10 minutes in boiling water or microwave until soft enough to pierce with a fork.
Strain and mash potatoes, adding water if necessary.
Next top the rice topping mixture with potatoes.
Place in the oven and cook for 10-15 minutes. Serve and enjoy!

1 package daal or other instant Indian rice toppings such as lentils madras, moong dhal, or chana masala
5-10 small baby potatoes or 1/2 a pound of potatoes of your choice (sweet potatoes, yams, etc.)
