Eggplant and Rice Veggie Burgers

    Instructions

    Chop the eggplant into manageable pieces and grill or roast in oven until golden brown.
    Blend with spices, garlic and lemon. Mix the eggplant mixture with all other ingredients in a bowl.
    Form patties and grill in press or on a non-stick pan. You can bake as well. Remember to flip when golden brown in pan and to flip after 7-8 minutes in the oven, taking patties out after another 5 minutes.
    Serve and enjoy.

    Ingredients

    1 large eggplant
    1 large red onion
    2 cloves garlic, minced
    2 cup oats
    3 cups brown rice
    1 cup carrots, shredded
    1/2 cup bell pepper, diced
    1 cup black beans
    1 tablespoon cumin
    1 tablespoon smoked paprika
    1 tablespoon chili flakes, or to taste
    1/2 lemon, juiced
    Additional veggies of choice
