Linda's Black Bean & Quinoa Salad

    Instructions

    Cook quinoa in water by bringing to a boil, stir, cover, and simmer at low heat for 15 minutes. Turn off stove, and let quinoa cool.
    In a medium bowl, mix olive oil, lime juice, and cumin. Toss the dressing mixture with prepared quinoa, black beans, green onions, and cilantro. Enjoy.

    Ingredients

    1 cup quinoa
    2 cup water
    1/4 cup olive oil
    2 lime (juice)
    1 teaspoon cumin
    1 can black beans, rinsed
    5 green onions, chopped
    1/4 cup cilantro, chopped

      mmm nice salad! just lovely, l don`t use garlic,neither onions, l do add some seeds, grains and black and green olives, well just a hint,oooh some chia too!
