Instructions
Add apple cider vinegar to non dairy milk, let sit for 5 minutes.
In the meantime, stir together ground flax seed and water in a small bowl.
Combine remaining dry ingredients in large bowl, stir well or sift to mix thoroughly.
Add the flax seed mixture to the milk and add remaining wet ingredients, stir to combine. Add wet to dry, fold batter gently until homogeneous (be sure to not over mix).
Add chocolate chunks if desired. Pour into muffin tin or loaf pan, bake 20 minutes at 375 for muffins or 40 minutes at 350 for a loaf, or until toothpick comes out clean.
Let cool, serve and enjoy!
