    Instructions

    Add all ingredients into a high speed blender and blend until smooth.
    Add a tablespoon or more of the paste to curries, etc. Stores well in the refrigerator.

    Ingredients

    1 onion
    2 garlic cloves
    2 lemongrass sticks
    3 bird eye chilies, or to taste
    5-6 cayenne peppers, red or green depending on what flavor of curry you want
    handful of kaffir lime leaves
    1 galangal
    1 tablespoon ground cumin
    1 tablespoon ground coriander
