Vegan Jambalaya - Edit
The vegan jambalaya was delicious! The rice and vegetables were cooked to perfection. The tomato base complimented the tastes. I never enjoyed jambalaya like this even before turning vegan, and this is the first time I've seen vegan jambalaya in a restaurant! It was served with corn kernels and grape tomatoes.

The Happy Vegan is so good! Cremini mushrooms, peas, corn, spinach, tomatoes, onions, and bell peppers sautéed in extra virgin olive oil, served with rice.
