Great Bibimbap - Edit
Super nice staff and great tasting Bibimbap. I let the owner know I was vegan and didn't want the egg. He said he'd give me more vegetables to replace the egg. Veggie dumplings were tasty too.

The owners of the truck are knowledgeable about veganism and happy to let you know what items are vegan! My partner and I got the spicy tofu bibimbap and some veggie dumplings. I think the tofu could have been spicier, but it was still delicious 😍

Hit the spot at the brewery - Edit
We had El Kimchi while at New Belgium brewery. The bowl with tofu was very tasty and I absolutely loved the veggie dumplings. Nice option while having some beers.
