Yum!

Before I visited this place I first emailed to confirm vegan choices and the correspondence was so easy and thoughtful. Soooo many vegan options. Going back soon to continue sampling the menu

Scratch-made noodles not vegan--Pricy and smaller menu than they used to have

PLEASE NOTE: The house-made noodles (wheat noodles) contain egg.

I went to Issei when they first opened years ago. The menu then was very wide and had many options, though the location was a little odd.

The new and "improved" Issei is much more about creating a cultivated experience based on their in-house scratch-made noodles and shoyu (soy sauce). The menu is much smaller. I love the new look inside, the mural outside, but I'm not super into the menu & new, more pretentious vibe. Nothing is wrong with being proud of making from scratch, and that certainly can be a selling point. But I miss the wider variety and easier time as a vegan.
The house-made noodles are not vegan, so be aware to have a vegan noodle dish you must substitute rice noodles for a $2 upcharge. I do not believe the rice noodles are made in-house, so I feel like an upcharge for bought noodles when everyone else is getting labor-intensive scratch noodles is silly.

The menu changes seasonally, so they sometimes have more, and sometimes have less vegan options. The menu also has a note actively discouraging modification to dishes as "we believe altering these recipes will tip the harmony of the bowl's balanced flavors."
The menu is of the kind where they provide the name of the dish, and a list of ingredients to make it sound fancy, which results in a lot of googling and questions unless you are a ramen-head. It would be helpful if they explained on the menu or in the restaurant some terms almost exclusively used in ramen recipes. My mom does not know what tare, ajitama, chashu, beni shoga, niboshi oil, dashi, tantan, etc. mean.

Pros: food is cultivated and tasty

Cons: ramen-head jargon, limited vegan options, discourage modification, scratch-made noodles not vegan

Good Ramen

I had the Tofu miso ramen. It was good but when I asked if it was vegan I was told that the wheat noodles were not. They apparently contain egg. The server subbed them with rice noodles for an additional charge. Not sure how much because I didn’t see the check. I wish this would have been mentioned on the menu before ordering. I much prefer wheat noodles. Also the tofu was raw and didn’t have much flavor. The broth was good though and server was pleasant.
