Excellent Options that Taste Good! - Edit
I love finding great family-owned places to eat that have genuine plant-based/vegan options when I travel. If you are ever passing through Staunton I highly recommended this cute taco spot!! SO GOOD!! The corn tortillas are so perfect and do not fall apart. I got the sweet potato & black bean and the squash & mushroom. On the menu they do include cheese but easy to request no dairy, they are very accommodating! Loved both. The tomatillo salsa was also incredible!

Limited but tasty - Edit
The vegan protein option is sweet potato and black beans, which can be swapped into most of their menu items to make them vegan. The guacamole is aces, and the pumpkin seeds garnish is highly recommended -- it took my burrito bowl over the top. Everything is customizable and I lightened my burrito bowl by swapping out the rice for greens. Great whole foods, healthy option with very friendly service.

Unimpressive Vegan Options - Edit
As a vegan, you're limited to two fillings: squash or sweet potato and black bean. And you must request them without dairy. I used to come here before I was vegan, and I have to say their food really suffers in tastiness without the cheeses and dairy-based sauces. What you end up with after the necessary subtractions, anyone could easily make at home. Awfully high prices for a whole lot of meh.

Great vegan option in Staunton - Edit
I had a burrito with black beans and sweet potatoes, plus a spicy habanero sauce which was very tasty and not overwhelmingly hot
